Equinox Kombucha is brewed in Britain from a deliberately simple base: organic Chun-Mee green tea, raw cane sugar, and filtered water. Fermentation is driven by a live SCOBY — a Symbiotic Colony of Bacteria and Yeast — which gives the drink its characteristic tang, natural effervescence, and the faint sediment you may notice in the can. That sediment is a normal marker of live fermentation, not a quality issue.
One practical consequence of the fermentation process is its effect on caffeine. Equinox states that most of the caffeine present in the green tea base is naturally removed during brewing, leaving approximately 2.7 mg per 100 ml — a fraction of the roughly 40 mg per 275 ml found in brewed green tea, and considerably less than coffee at around 110 mg per 275 ml. This makes it a realistic everyday soft drink alternative for people who are mindful of their caffeine intake.
